We had a great time at the beach last night . . . stayed until it was dark and our car filled with sand!
Today is Saturday . . . and here is a great recipe for breakfast or dinner!
JOE’S SPECIAL
Nobody remembers Joe’s last name, but this is still an old-time San Francisco favorite. Mushrooms may be added if you wish. Serves 4 (My mom grew up in San Fran!)
1 package chopped frozen spinach
or 1/2 pounds fresh spinach, chopped
1 medium onion, chopped
1 clove garlic, finely minced
2 Tablespoons olive oil
1 pound lean ground beef
salt and pepper to taste
4 eggs, lightly beaten
Thaw frozen spinach and drain well, or cook fresh spinach and drain well. Set aside. In a heavy skillet saute the onion and garlic in oil until transparent. Add beef and brown thoroughly. Sprinkle with salt and pepper and stir in reserved spinach. Keeping heat high, add eggs to the skillet, stirring constantly until eggs are blended and cooked. Adjust seasonings and serve immediately.
(I always use fresh spinach and have never added the mushrooms. Very good and very easy dinner)
I love a little ketchup on there and extra pepper!
