Amazing Meal for 10 In Just Over An Hour

“WE ARE HAVING PEOPLE OVER IN AN HOUR?  AHHHHHHHHH!”

Good morning!  Happy Saturday.  We are excited as Hudson comes home from Scout camp today – been a long week without our eldest.  This is my party of 5-10 go to meal.  I can prep this meal in 20 minutes, and have it all ready for a 6:15 dinner even if I don’t do anything until 5 pm.  I like speed.

You will need for the main course – a Santa Maria Trip-Tip from Trader Joes.  They are the best.  You can buy the biggest one they sell, about $18, and it will feed a ton as you slice it up into a myriad of pieces.

Marni is our salad “queen” and she does a killer salad.  You can choose what you want here, but I am a big apples, bacon, cranberry, and shaved pecans in the salad guy.  The dressing is below and it will make everything POP!  It is a from my mom’s best friend who would come to Black Butte Ranch with us every summer.  Her nickname was “Babe.”

The rest is self-explanatory – i.e., the potatoes and the asparagus.  We have done everything from fruit for desert, smores over the fire, or a little gluten-free brownie square with some vanilla ice cream.  Again, Trader Joe’s gluten free brownie mix is the bomb-diggity!

Babe’s Salad Dressing

6 TBL Olive Oil

3 TBL White Wine Vinegar

½ TSP Salt (dash pepper)

½ TSP Dry Mustard

1/16th TSP Nutmeg

½ TSP Dry Basil (use generous if you have fresh)

4 Garlic Cloves Crushed

Shake well!  Serve

Garlic Rosemary Potatoes

3/4 Pound Red Potatoes

2 TBL Butter

2 TSP Lemon Juice

1 Garlic Clove Crushed

2 TSP Chop Rosemary

Cut potatoes into small wedges – about 7 cuts per

Put in 13 by 9 greased dish

Mix all together

Cook about 45-55 at 400 degrees

Don’t forget to stir at times

Roasted Asparagus

Pound and a half of asparagus

2 TSP Olive Oil

½ TSP Salt

¼ TSP Dried Thyme

¼ TSP Pepper

(You can add rosemary, or random Italian seasoning if you want)

Snap off ends – grease 13 by 9 dish

Mix and cook @ 400 for 20 minutes
